I’m all about dessert…and balancing that with plenty of greens (like in the Stripped Green Smoothie), protein, and healthy fats. But sometimes you just “need” a little chocolate and that’s totally okay including chocolate chip cookies (and the dough!) every now and then. Today’s recipe has all the taste and satisfaction of chocolate chip cookie dough but without the ingredients that leave many of us a not so great feeling afterwards + fiber and potassium rich bananas make it feel like an even sweeter treat. Oh, and did I mention there’s a protein and fiber rich secret ingredient in these? Chickpeas are hidden in this dip, they not only increase the protein and fiber content, but also give it a nice thick and creamy texture sans refined flours or sugars. A sweet dessert made with a hidden ingredient, chickpeas, in a cookie dough mixture spread on top of raw bananas then frozen for a delicious cool and healthy treat.
Ingredients
  • 1, 15 ounce can chickpeas, well rinsed and drained
  • 1/4 cup cashew butter (or almond butter)
  • 1/4 cup almond milk
  • 1/3 cup chocolate chips
  • 5 pitted dates
  • 2 tablespoon melted coconut oil
  • 3 teaspoon ground chia seeds
  • Pinch of sea salt, adjust to taste
  • 2 teaspoon vanilla extract
  • 2-3 bananas, sliced and frozen
Instructions
  1. In a food processor or blender, combine all ingredients except chocolate chips and bananas. Pulse until smooth. Pour the chocolate chips and stir until evenly spread throughout.
  2. Spoon mixture on banana slices. Chill in the refrigerator or freeze for a frozen treat.
  3. Store in an airtight glass container for up to 1 week.
