Beat the heat with this perfectly refreshing Summer Simple Gazpacho.

We’re big fans of empowering the home cook here at Nutrition Stripped. Instilling an understanding of healthy meals and the tools and skills necessary to create delicious recipes in your home, and enjoying the process is a key factor.

With that in mind, not all recipes need to be complex or advanced to be delicious. In fact, some of our favorite dishes to cook at home are some of the simplest recipes. We couldn’t think of a better example of this food-philosophy than one of our personal favorites Gazpacho!

Simple Gazpacho

Let your blender do the work

Easy is the name of the game for this delicious soup. Odds are you most likely already have everything you need to make this recipe in your fridge and pantry. Just toss everything in a blender and you’re all set.

Fun fact, the sherry vinegar helps keep this soup tasting fresh even after a couple of days in the refrigerator, so it’s a perfect option to use up some extra veggies in the fridge and have on hand for a quick bite!

The Recipe

Serves 6

Ingredients

4 large ripe tomatoes

1 medium cucumber, peeled and seeds removed

1 red bell pepper, seeds removed

1 small red onion

3 cloves garlic

3/4 cup olive oil

2 tablespoons sherry vinegar

1/4 cup chopped parsley

2 slices gluten-free bread, crusts removed. plus more for serving

salt and pepper to taste

 

 

Directions

Step 1

In a Vitamix blender, add tomatoes, cucumbers, peppers, garlic, red onion, gluten-free bread, olive oil, parsley, and sherry vinegar. Blend until smooth.

Salt and pepper to taste
