This Piña Colada Dairy-Free Sherbet is delicious, dairy free, simple dessert packed with fresh fruit.

We are always looking for fun and healthy alternatives to familiar recipes here at Nutrition Stripped. Familiar flavors and ingredients but used in a health-conscious way. With this concept in mind, we took two of our favorite frosty treats a Piña Colada and coconut ice cream and made this up. A mixture of pineapple, lime and coconut, and refreshing, dairy-free ice cream to create this Piña Colada Dairy-Free Sherbet.

What’s not to love?

Piña Colada Dairy-Free Sherbet

It’s hard to keep track of what you’re putting in your body when it comes to desserts. If you take the time to read the labels of some of your favorite icy treats, most of the time you will see a list of ingredients you barely recognize and that they are packed with dairy and extra sugar.

We set out to create a super easy, healthy and refreshing treat that only has a combination of fruit and no added sugar or dairy. By using coconut milk, fresh pineapple, and a couple of limes, we created a delicious variation of a classic cocktail favorite you can enjoy any time.

The dessert that lasts and lasts

You don’t have to have Piña Colada Dairy-Free Sherbet for only one day! Store your sorbet in the freezer for up to a month in an airtight container. Whenever you’re ready for a treat, just pop it in a food processor or Vitamix blender and pulse until it’s airy and ready to enjoy!

Stripped

Pineapple

Pineapples are high in fiber and contain natural enzymes which help break down proteins and may also may help relax uterine muscles which helps shed the uterine lining that can help with menstrual cramps (the science behind the efficacy of this is lacking, but some studies have shown benefits of bromelain and it’s potential of penetrating the uterine wall).

Manganese also plays an important role in amino acid, cholesterol, and carbohydrate metabolism in the body and a diet rich in manganese can help women during their menstrual cycle by preventing and treating PMS symptoms such as cramping and mood swings.

Coconut

Both strawberries and cherries are loaded with this antioxidant that helps fight free radicals and we know vitamin C plays a role in maintaining healthy immune function, skin integrity, cardiovascular health, prevents the common cold and plays a role in cancer management from prevention to treatments that may include vitamin C.

 

 

 

The Recipe

Ingredients

1 ripe pineapple

3 limes, juiced

1 1/2 cups coconut milk

Directions

Step 1

Remove rind from pineapple and cut into large chunks. Add to a Vitamix blender and blend until smooth.

Using a fine mesh strainer, strain pineapple into a large bowl, stirring contents of strainer occasionally to help separate the pulp.

Return pineapple juice to Vitamix blender, add coconut milk and lime juice and blend at medium speed until aerated, about 3 minutes.

Step 2

Pour contents of the blender into a large metal bowl. Cover with plastic wrap and place in a freezer for 1 hour. Remove sorbet and stir to incorporate air and combine parts that are beginning to freeze.

Every 45 minutes or so, remove the bowl and stir to help aerate sorbet and keep from freezing solid. Sorbet is ready once it has set to the consistency of ice cream.

Serve with lime wedges, pineapple chunks, and toasted coconut.
