Last week I was raving about summer veggies and now I’m onto the next one, summer fruits! Peaches are plentiful here in Nashville, and we have the amazing Peach Truck that sets up around the city and sells the best peaches I’ve ever had. This recipe uses those golden babes plus fresh strawberries from the farmers market with a boost of protein using one of my favorite vanilla plant-based protein powders that I’ve been hooked on lately. I hope this Peach Strawberry Protein Smoothie quickly becomes a go-to for a fueling breakfast or a snack on the go this summer!
Oh so peachy.
I love adding peaches to all the things from salads, salsa, desserts, and of course smoothies like this one! The combination of sweet strawberries and super sweet and slightly tangy peaches is summer in a glass. Strawberries are one of my favorite summer fruits not just because of their delicious flavor, but because they’re rich in antioxidants, vitamin C, manganese, iodine, folate and other B vitamins, copper, potassium, magnesium, and phosphorus. Peaches also contain vitamin C, A, potassium, and phosphorus, and both peaches and strawberries are loaded with fiber. I highly recommend getting both of these fruits organic since we eat the skins and the EWG just updated their “dirty dozen” list for 2016 and these just made the list(strawberries are at #1 and peaches #4!). I’ve been loving this smoothie as a post-workout smoothie or a quick snack on the go. The healthy fats from coconut milk will keep you satiated as well as the boost of protein from the new Kashi GoLean Vanilla Vinyasa plant-based protein powder I’ve been enjoying lately.
The powder has 20 g protein per serving and is completely vegan and gluten free which is great for those with food sensitivities. It’s also is made from greens, beets, sprouted legumes and plant protein, so you know I’m all about it since it’s in line with the NS Philosophy. My favorite added perk is that it has 1 billion CFU probiotics Bacillus coagulans, so not only is it good for your body but it’s also good for maintaining gut health!
- 1 cup almond milk
- 1/2 cup full fat canned coconut milk
- 1 peach, pitted (or you can use 1 cup frozen peach)
- 1 cup frozen strawberries
- 1-2 pitted dates, adjust to desired sweetness
- 1 scoop Kashi GoLean Vanilla Vinyasa Protein Powder
- Pinch of sea salt
- Handful of ice, adjust to desired consistency
- In a high-speed blender, combine all ingredients and blend until smooth. Enjoy immediately or save in the fridge in an airtight glass jar for up to 1 day.
