These Smokey Huevos Rancheros are super quick and easy and deliciously smoky.
It’s no secret at this point and we love eggs here at Nutrition Stripped. It is a little less known fact that I am a big fan of breakfast for dinner, so when the end of the week rolled around and we had eaten all of our prepped meals for the week, I could think of only one dinner option that would do the trick. Huevos Rancheros!
I have been making Huevos Rancheros since my college days for many reasons. They are super easy to make, packed with healthy fats and protein, and perfect for batch-cooking. Just make a big pot of The Easiest Black Beans and Chipotle-adobo salsa and you’re good to go.
Smokey Huevos Rancheros
Huevos Rancheros, or “eggs ranch-style” is the perfect meal for the active working lifestyle. This dish originated in rural Mexico and was a nutritious and flavorful meal that was hearty enough to support sustain the hard-working farmer’s energy through their daily tasks.
As this dish spread beyond Mexico to different parts of the world, many different variations appeared, using lettuce or cheese, and in some cases meats and other proteins.
However, you choose to enjoy Huevos Rancheros, we know you will appreciate his hearty meal as much as we do!
A good salsa has depth
Not much has changed from the original recipe that I used since college, but the biggest improvement was the Chipotle-adobo salsa. It’s a game-changer, for sure! I find myself making it on its own and storing in the fridge to add to wraps, soups, potatoes, the sky is the limit!
This salsa also uses one of my favorite ingredients in cooking, which is chipotle peppers, packed in adobo. It’s a magical ingredient that is spicy and smoky, acidic and chocolaty, all at once.
I love to make a big batch, pack some in the freezer and keep the rest in the fridge to munch on throughout the week. Even if you don’t feel like putting the time in to cook your own, canned beans are just as good and come in a world of variations for any occasion.
