These Smoky Huevos Rancheros are super quick, easy, and deliciously smoky!

While it’s no secret at this point that we love eggs here at Nutrition Stripped, it is a little less known fact that I’m a big fan of breakfast for dinner. Whenever the end of the week rolls around and we’ve eaten all of our prepped meals, Huevos Rancheros is one of my favorite go-to dishes!

I’ve been making Huevos Rancheros since my college days for many reasons. They’re super easy to make, packed with healthy fats and protein, and perfect for batch-cooking. Just make a big pot of The Easiest Black Beans and the Chipotle-adobo salsa in this recipe, and you’re good to go!

Huevos Rancheros originated in rural Mexico and was a nutritious and flavorful meal that was hearty enough to support and sustain the hard-working farmer’s energy through their daily tasks. As this dish spread beyond Mexico to different parts of the world, many different variations appeared, using lettuce or cheese, and in some cases meats and other proteins.

  • Tortillas
  • Eggs
  • Black beans, store-bought or homemade
  • Crushed tomatoes
  • Poblano pepper
  • Chipotle chili
  • Yellow onion
  • Garlic
  • Olive oil
  • Cumin
  •  Salt
  • Pepper

How To Make These Smoky Huevos Rancheros

First, prepare your onion and poblano pepper in a skillet over medium heat with garlic and cumin. Next, blend the cooked vegetables, along with crushed tomatoes, and chipotle chili in your blender.

Cook your canned beans on the stovetop with a splash of lime juice. Lastly, fry up two eggs and assemble your beans, salsa, and eggs on top of two warmed tortillas!

There’s a tip you should keep in mind that will help you save time when assembling this dish.

Prep Your Ingredients In Advance

Looking to speed up the prep time a bit? You can prepare your beans and salsa ahead of time! Add them to your meal prep for the week, and all you’ll have to do is fry up some eggs when you’re ready to eat. So simple and easy!

FAQ About How To Make These Smoky Huevos Rancheros

What if I don’t eat eggs?

Don’t sweat it! Eggs aren’t for everyone. Try replacing the eggs with your favorite protein of choice – maybe some tempeh or tofu.

Foundational Five Balanced Meal Breakdown

Non-starchy Carbohydrate

  • Pablano pepper
  • Yellow onion
  • Crushed tomatoes
  • Chipotle chile

Starchy and/0r Sugary Carbohydrate

  • Black beans
  • Tortillas

Protein

  • Eggs
  • Black beans

  • Olive oil
  • Avocado (optional)

Flavor Factor

  • Lime juice
  • Garlic
  • Black pepper
  • Salt
  • Cumin

The Recipe

Serves 4-6

Ingredients

Up to 12 tortillas (2 per serving)

Up to 12 eggs (2 per serving)

14oz black beans, store-bought or homemade

14 oz can crushed tomatoes

1 poblano pepper, stem, and seeds removed and diced

1 chipotle chili, packed in adobo

1 small yellow onion

2 cloves garlic, diced

1 tablespoon olive oil

1/2 tablespoon cumin

salt and pepper to taste

Serve with lime, sliced avocado, and fresh cilantro

Directions:

Step 1

Heat oil in a pan over medium heat until shimmering. Add onion and poblano pepper and cook until tender and onions are translucent and begin to brown around the edges, about 10 minutes.

Add garlic and cumin and cook until fragrant, about 30 seconds.

Step 2

Add onion mixture into a Vitamix blender, add crushed tomatoes and chipotle chili and blend until smooth. Salt and pepper to taste and set aside.

Step 3

Drain and rinse black beans, (if using canned) and cook over medium-high heat with a splash of lime juice until hot and tender. Salt and pepper to taste and set aside.

Warm tortillas in a dry skillet or in the oven until lightly crispy and browned.

Step 4

For assembly, place 2 tortillas on a plate, top with desired amount chipotle-adobo salsa, beans and 2 fried eggs on top. Serve with lime wedges, avocado, and fresh cilantro.

As always, store in an airtight glass container that we recommend from the NS Shop. Store chipotle-adobo salsa and beans for up to a month in the freezer, or in the fridge for one week. Reheat upon serving.
