How To Make This Grilled Portobello Mushroom Steak Bowl

First, season your sweet potatoes, mushrooms, and asparagus. Next, grill your sweet potatoes, mushrooms, asparagus, and corn. Lastly, plate your grilled vegetables and serve with a drizzle of Creamy Balsamic Vinaigrette. Enjoy!

There are a couple of tips you should keep in mind that will help you store, add versatility, and enjoy this delicious nourish bowl.

Try Spreading Your Dressing On The Plate

We traditionally think of dressings as toppers, right? Well this time, try something a bit different. When you’re arranging your ingredients intentionally on top, you can spread your dressing on the bottom of the plate to ensure every bite has a boost of your flavor factor! 

Prep Your Ingredients In Advance

Looking to speed up the prep time a bit? You can chop up and prepare your vegetables in advance so you have a little less work on your hands when you decide to grill your Portobello Mushroom Steak Bowl. Save the seasoning until right before you toss everything on the grill! This will ensure you preserve the texture and turgor of the vegetables. 

FAQ About How To Make This Grilled Portobello Mushroom Steak Bowl

What if I don’t like Balsamic Vinaigrette?

Don’t sweat it! Balsamic vinaigrette isn’t for everyone, and that’s perfectly fine. Simply opt for your favorite Flavor Factor dressing instead, such as our Honey Mustard Dressing!

What if I don’t have a grill?

That’s quite alright! You can simply throw these same vegetables on a cookie sheet and grill them in the oven instead. Use whatever is readily available to you!

Foundational Five Balanced Meal Breakdown

Non-starchy Carbohydrate

  • Portobello mushrooms
  • Asparagus

Starchy and/0r Sugary Carbohydrate

  • Corn
  • Sweet potatoes


  • Cooked tofu or any preferred protein of choice (optional add-on)


  • Olive oil

Flavor Factor

  • Paprika
  • Cumin
  • Salt
  • Pepper

The Recipe

Serves 4



4 large portobello mushroom caps, stems, and gills removed, wiped clean

4 ears of corn, husks removed

1 pound fresh asparagus

4 tablespoons olive oil, divided

4 sweet potatoes, cut into wedges

1 teaspoon paprika

1 teaspoon cumin

Salt and pepper 

1 batch creamy balsamic vinaigrette


Step 1

Light one chimney full of charcoal. When all charcoal is covered with gray ash, pour out and arrange coals on one side of the charcoal grate. Set cooking grate in place, cover grill, and allow to preheat for 6 minutes. Clean and oil cooking grate.

Step 2

Place sweet potato wedges in a large bowl and toss with 2 tablespoons olive oil. Sprinkle with paprika, cumin, salt, and pepper to taste. Place potato wedges on the cool side of the grill grate, and cover and cook until tender, about 40 minutes.

Brush mushrooms lightly with olive oil and salt and pepper to taste. Place portobello mushrooms over the hot side of the grill, and cook until mushrooms are well browned on both sides, about 4 minutes per side. 

Toss asparagus in 1 tablespoon olive oil and salt and pepper to taste and grill until tender and lightly charred, about 4 minutes. 

Place corn over the hot part of the grill, and cook until tender and lightly charred, about 8 minutes.

Step 3

Plate grilled vegetables and serve with a drizzle of Creamy Balsamic Vinaigrette.
