Since we’re in holiday mode around the globe, I’m going to be sharing a lot more sweet treats than I normally would- I hope you all don’t mind that (ha ha). I absolutely love these Raw Chocolate Malt Brownie Bites when I’m craving something sweet after dinner or for a quick snack. The perfect combination of healthy fats and carbohydrates is a hunger killer combo (POW!). These brownie bites don’t have the same texture as a cooked brownie obviously- they’re not warm, but they’re still ooey-gooey and super decedent!
Well friends, I hope you all had a beautiful Thanksgiving! Actually, I still have a couple left this weekend- hey, the more the merrier right? Today I wanted to share possibly the last pumpkin recipe I’m sharing this season (sad I know) as a farewell to November, Pumpkin Spice Granola. This granola is loaded with some of my favorite nuts, seeds, pumpkin spice, and pumpkin puree; it’s the runner-up favorite to my beloved Maple Banana Nut Granola.
This granola is slightly sweet (not as sweet as the Maple Granola Nut) and has a delicious and amazing flavor of pumpkin and pumpkin spice. I’ve been enjoying this granola lately with a little homemade Almond Milk with sliced bananas or blended bananas with almond milk, which creates a super thick and sweet milk. Savory Mushroom and Herb Gravy with Cauliflower Potato Mash is like Thanksgiving party in your mouth. It’s another beautiful side dish I wanted to share with you all this holiday season, hands down this may be a new favorite side dish in my household- even for my mashed potato lovin’ man. What I love most about this mushroom gravy is the deep, earthy, bold flavors of the mushrooms and herbs paired with the light, creamy, and fluffy Cauliflower Potato Mash, which is mostly cauliflower and a small amount of potatoes. This veggie side dish is a perfect addition to any holiday table.
You all know I love sneaking in vegetables, especially cauliflower into recipes just like my Cauliflower Pizza Crust. Today the focus is on mashed potatoes getting lower carb and lower fat makeover in comparison to traditional mashed potatoes; and without sacrificing any of the flavor or texture. Literally, throughout this recipe development and massive taste testing (I know, it’s such a hard job right?), I kept saying to myself “wow, this is good!”. Let’s just take a minute here and talk about bread. It’s a staple in households all over the world in some form or another. Maybe it’s pita for your family, or french baguette, or naan, rye, flour tortillas, dosa, lavash, sweet bread, flatbread, bing, biscuit, challah, ciabatta; and of course familiar to the states, white bread. Each and everyone of us has some relation to bread or “breaking bread”, which is a universal and communal part of our cultures during meal times. I embrace this aspect whole heartedly and today, I’m inviting you into my kitchen to break bread in a new way. I want to take this classic staple food that we all can relate to, and share a recipe that’s not only embracing this cultural aspect, but nourishing our bodies 100%.

This is another incredibly simple vegetable side dish for the holiday season just around the corner. This veggie dish is bursting with sweet and juicy red grapes, reduced balsamic vinegar, and slightly crisp brussels sprouts. As promised, all month long I’ll share many of my personal favorite dishes this holiday season in hope that I’ll inspire you to try something new with a healthier twist. All it takes are very small changes to meals, appetizers, drinks, and desserts to overall decrease the typical calorie-laden meals during the holidays.
Brussels sprouts are one of those vegetables that either make you cringe with the thought of eating them or jump with joy because you love them so, okay maybe not to these extremes, but you get it. Even as a little me, I loved brussels sprouts steamed especially with cheese on top, nowadays I still love them sans cheese. What I remember even more than the enjoyment of eating brussels sprouts was the memory of my mother who grew them in the garden and I was (and still am!) fascinated by the gorgeous brussels sprout stalk- it’s gorgeous!
